Tips to reuse vegetables

Tips and tricks for using leftover vegetables.

Don't waste veggies! In addition to using cutting waste, you can also use the leftover vegetables. Think of making salads, quiche, bread or chips. We are happy to share a few ideas per category:


Salads

  • unnamed-7Mix different (cold) vegetables with a homemade dressing, which you can serve as a side dish.



  • Cut remaining chicory leaves into small pieces, mix with apple, walnut, honey and leftover (blue) cheese for a salad.




  • Make an Italian panzanella salad. A (stale) bread salad soaked in the juice of ripe tomatoes. Mix with basil, red onion, bell pepper, olives or other Italian herbs/vegetables.



Quiche

You can use all the vegetables in a quiche. Use dough to create a crispy crust, egg for binding, extra cheese and herbs to taste. The following vegetables are an idea to combine:



    • Green asparagus, spinach, zucchini, tomato (with salmon).
    • Cauliflower, broccoli, caramelized onion, potato (and chicken).
    • Green beans, carrot, peas, red onion, corn and mushroom.
    • Leek, mushroom, spinach, carrots (and chicken).
    • Spinach, broccoli, zucchini, bell pepper (and red meat).


Bread

Many vegetables can be used in bread. You can use the bread in combination with tapenades, sandwiches, toasted sandwiches, soup of the day or salads. Examples of bread with vegetables are:

    • Tomato with olive bread
    • sweet potato bread
    • Pumpkinbread
    • Caramelized onion bread



 







Chips

You can make chips from vegetables, just like from cutting waste, you can use the chips as a side dish, snack, garnish over soup or as a crunchy addition to salads. The following vegetables are suitable for this, among others:


    • Beetroot
    • Parsnip
    • Carrot (both purple and orange)
    • (Sweet) potato
    • Kale
    • Mushroom
    • Broccoli
