Optimizing Your Buffet Setup

How can you arrange your buffet to be as efficient as possible with minimal waste? Here are a few tips to help you out.

Buffets are one of the biggest sources of food waste in the hospitality industry. While removing the buffet entirely in favor of an à la carte option may not always be possible, there are definitely ways to optimize it.


1. Smaller dishes, refill more often

Using smaller dishes and refilling them more frequently is a simple step that can significantly reduce food waste. The customer experience remains the same, and it also helps keep your products fresher for longer.

2. Adjust the setup

Rearranging your buffet can greatly reduce food waste by adjusting to the number of guests. People often serve themselves more food than they can actually eat, but by changing the layout, you can help prevent this. Consider these tips:

  • For fewer guests, you can close off sections of the buffet, making the remaining part appear fuller while reducing waste.
  • Place cutlery at the beginning of the buffet so guests are less likely to take multiple plates.
  • Avoid using trays to prevent guests from taking too many plates at once.
  • Carefully design the buffet’s flow to guide guests toward specific products.
