5 Tips & tricks on using trimmings

Trimmings are unavoidable and shouldn’t be the primary focus for reduction. Yet you can do many things with Trimmings. In this article, we share 5 tips and tricks on how to use them.

1. Crispy vegetable peel as crisps or garnish

Grill the vegetable peels with salt & pepper and/or other herbs.

You can use the crispy peels as:

  • Crisps
  • Snacks
  • Garnish for soups
  • Extra bite in salads

Suitable vegetables are: (sweet) potato, parsnip, carrot, beetroot and zucchini.

2. Herbal dressing of stems and leaves

Chop the leftover herb stems and leaves finely and mix them with olive oil, apple cider vinegar, or balsamic vinegar. You can use the dressing for:
Salad dressing

  • Salads
  • In a mix of cold vegetables
  • fried fish
  • Pasta dishes
  • Tapenades

Suitable herbs are: basil, rosemary, thyme, parsley, coriander, oregano. Vegetables like tomatoes, chili and garlic also give a nice taste to the dressing. 

3. Vegetable pestos

The base for making pesto is a mix of basil, garlic, pine nuts, (olive) oil, salt, lemon, and Parmesan cheese. For a change, you can substitute the basil with leftover vegetables, such as:

  • Kale pesto. Tip: Cook the kale for 3 minutes to remove the bitter taste.
  • Eggplant & tomato pesto. Tip: Use ricotta cheese instead of Parmesan cheese.
  • Arugula pesto.
  • Carrot tops pesto.

4. Broth from peels and bones

Make broth from vegetable peels, crushed vegetables (which provide the most flavor), bones, and fresh herbs. You can use broth for:
Bouillon making

  • Cooking pasta and rice
  • Making sauces
  • Making soups
  • Preparing vegetable or potato purée
  • Cooking stews 

5. Other things you could do with trimmings

Trimmings can also be used in other ways, such as the examples below:
Vanilla Sugar

  • Mix the stem of broccoli into stir-fries or as extra crunch in a salad.
  • Use citrus peels when cooking pasta or rice for a fresh flavor.
  • After use, store fresh vanilla beans in sugar to make your own vanilla sugar
